Today Erin puts a twist on her chili by introducing you to White Chicken Chili and as an added bonus, learn to cook Erin’s guacamole! The crock pot staple give you a meal you can cook quickly and can feed a crew and can last for days!
White Chicken Chili
2 boneless, skinless chicken breasts
3 TBSP Lawry’s seasoning salt
1 tsp Garlic Powder
1 tsp Onion Powder
Ground Black Pepper to taste
4 cans Cannellini or White Kidney Beans
4 cans Diced Roasted Green Chilis (2 hot and 2 mild)
1 ½ Quart Heavy Whipping Cream
Preheat oven to 350 degrees. Mix all the seasoning powders together. Liberally season both sides of the chicken leaving about 1 teaspoon of season for later. Cook chicken 25-30 minutes or until fully cooked. Add beans, chilis and heavy cream to crockpot that is turned on high heat. Sprinkle about half of the remaining seasoning on top and stir. Once the chicken is cooked remove from oven and let it rest for 10 minutes before dicing into a small dice. Add all of the chicken to the crockpot and allow to cook until the chicken chili is thoroughly heated. This will depend on how fast and hot your crockpot gets. Add any of the remaining seasoning mixture if so desired.
2 large Avacados
2 Limes, zest and juice
Half of a Red Bell Pepper, Diced
¼ Quarter Cup Diced Red Onion
2 Cloves Garlic
Salt and Pepper to taste
Red Pepper Flakes to taste
Add avocados to medium size bowl. Zest and juice the limes. Mash with a potato masher or a fork until you reach your desired consistency. Dice the red bell pepper and onion and add to bowl. Add in 2 cloves of garlic grated or finely chopped. Season with salt, pepper and red pepper flakes. Mix and adjust seasoning as desired.
